Okonomiyaki: Craft Your Own Japanese Savory Pancake Delight

Okonomiyaki, often referred to as a “Japanese savory pancake” or “Japanese pizza,” is a delightful and customizable dish that brings together a medley of flavors and textures. Hailing from Japan, this versatile dish allows you to experiment with various ingredients to suit your taste. In this blog post, let’s dive into the world of Okonomiyaki and explore a simple yet delicious recipe to create this savory pancake at home.

Understanding Okonomiyaki: A Culinary Canvas

Okonomiyaki, whose name translates to “grilled as you like it,” is a savory pancake that typically consists of batter, shredded cabbage, and a variety of other ingredients. The beauty of Okonomiyaki lies in its adaptability – you can include ingredients like seafood, meat, cheese, and more, making it a versatile canvas for culinary creativity.

For the Batter:

– 2 cups all-purpose flour

– 1 ½ cups dashi (Japanese fish stock) or water

– 2 large eggs

– 1 teaspoon soy sauce

– Salt and pepper to taste

For the Filling:

– 2 cups shredded cabbage

– 1 cup diced protein (choose from shrimp, squid, pork, or a combination)

– 4 green onions, finely chopped

– 1 cup tenkasu (tempura scraps) – Optional

– 1 cup grated yamaimo (Japanese mountain yam) – Optional

For Toppings:

– Okonomiyaki sauce

– Japanese mayonnaise

– Bonito flakes

– Aonori (seaweed flakes)

1. Prepare the Batter:

   – In a large bowl, whisk together the flour, dashi (or water), eggs, soy sauce, salt, and pepper until you achieve a smooth batter.

2. Add the Filling:

   – Gently fold in the shredded cabbage, diced protein, chopped green onions, tenkasu, and grated yamaimo (if using) into the batter.

3. Cooking Okonomiyaki:

   – Heat a non-stick griddle or frying pan over medium heat.

   – Pour a ladleful of the batter onto the griddle to form a pancake, ensuring an even distribution of ingredients.

4. Flip and Cook:

   – When the edges become golden brown (after about 5-7 minutes), carefully flip the Okonomiyaki using a spatula.

5. Cook the Other Side:

   – Cook the other side until golden brown and the center is cooked through.

6. Serve and Garnish:

   – Transfer the Okonomiyaki to a plate, drizzle with Okonomiyaki sauce and Japanese mayonnaise, and sprinkle with bonito flakes and aonori.
