– 4 green onions, finely chopped

– 1 cup tenkasu (tempura scraps) – Optional

– 1 cup grated yamaimo (Japanese mountain yam) – Optional

For Toppings:

– Okonomiyaki sauce

– Japanese mayonnaise

– Bonito flakes

– Aonori (seaweed flakes)

Instructions:

1. Prepare the Batter:

   – In a large bowl, whisk together the flour, dashi (or water), eggs, soy sauce, salt, and pepper until you achieve a smooth batter.

2. Add the Filling:

   – Gently fold in the shredded cabbage, diced protein, chopped green onions, tenkasu, and grated yamaimo (if using) into the batter.

3. Cooking Okonomiyaki:

   – Heat a non-stick griddle or frying pan over medium heat.

   – Pour a ladleful of the batter onto the griddle to form a pancake, ensuring an even distribution of ingredients.

4. Flip and Cook:

   – When the edges become golden brown (after about 5-7 minutes), carefully flip the Okonomiyaki using a spatula.

5. Cook the Other Side:

   – Cook the other side until golden brown and the center is cooked through.

6. Serve and Garnish:

   – Transfer the Okonomiyaki to a plate, drizzle with Okonomiyaki sauce and Japanese mayonnaise, and sprinkle with bonito flakes and aonori.
